GENERAL DEFINITION:   The purpose of this position is to prepare nutritional meals for adult and juvenile Residents.

SUPERVISION RECEIVED: Work is performed under the immediate supervision of the Corrections Administrator.

SUPERVISION EXERCISED:  May supervise Inmates assigned to the kitchen.

DUTIES:

Plans and Prepares meals in accordance with the Eight Cycle Menu.

  • Figures quantities of food items needed daily for three meals (breakfast, lunch and dinner).
  • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
  • Ensure all food and all other items are stored properly.
  • Prepares and cooks nutritious, traditional, and special meals for Residents.
  • Prepares daily snacks for adult and juvenile residents.
  • Provides varied meals for juvenile residents.
  • Prepares menu with recommendations from IHS Nutritionist and Dietitian.
  • Performs daily inventory of food supplies using the inventory logbook.
  • Performs inventory check of food supplies after delivery

Complies with Food Sanitation and Health Standards.

  • Wear proper cooking attire. (i.e. apron, hat or hair net, gloves etc.)
  • Uses proper food handling techniques to alleviate food borne illness.
  • Uses the five steps for proper dishwashing and sanitizing.
  • Performs daily cleaning and sanitation of food service area.
  • Inspects equipment for cleanliness and functional operation.
  • Clean kitchen areas, including floors.

Maintains an inventory of sanitation items and kitchen supplies.

  • Performs daily inventory of kitchen cleaning supplies and documents inventory.
  • Performs daily inventory of food supplies as needed based on the inventory.
  • Orders food weekly according to the approved menu.
  • Orders cleaning supplies as needed.
  • Performs daily inventory of all kitchen knives and utensils and reports any missing items to Corrections staff.

Work with adult Residents assigned to Kitchen duty.

  • Provides orientation of Kitchen rules to Residents.
  • Teach Residents how to use kitchen equipment properly.
  • Ensure Residents follow food sanitation and health standards.
  • Prepare and provide Facility Incident Report to chain of command.

Performs other duties as assigned.

  • Attends meetings as required.
  • Conduct weekly shopping for supplies.
  • Provide culinary assistance to Tribal and Community Programs as needed.
  • Attend training as required.

MINIMUM QUALIFICATIONS:

KNOWLEDGE, SKILLS & ABILITIES:  Must have adequate knowledge in meeting the nutritional requirements of Adolescent and Adults. Knowledge of and ability to apply basic food preparation methods. Must have adequate knowledge in Food Sanitation and Health. Ability to maintain all equipment used in cooking, food preparation, food storage and cleaning.   Must have adequate knowledge in planning, preparing and cooking in large quantities. Skilled in preparing meals by volume. Skilled in use of restaurant grade kitchen equipment.  Ability to write reports and general correspondence. Knowledge and ability to provide general supervision. Must be able to follow oral and written instruction. Must have adequate knowledge in working with fractions and basic arithmetic. Must be able to communicate clearly and effectively in Zuni and English.  Must be able to establish and maintain adequate working relationships with tribal employees, community members, and the general public.

TRAINING & EXPERIENCE:  High School Diploma or Equivalent (GED) with two (2) years experience in cooking for large groups in a school, hospital, or other food service which required meal preparation for a large group of 12 or more.

LICENSE OR CERTIFICATES: Must have a valid New Mexico Driver’s License with no DWI/DUI convictions within the past three (3) years.  Driving is an essential part of the duties.

  • New Mexico Food Handlers and Health Certification is required upon time of employment.
  • ServSafe Certification – Must obtain within 90-days of employment.  
  • First Aid/CPR Certified – Must obtain within one year of employment.
  • Non-Violent Crisis Intervention Certification – Must obtain within one year of employment.
  • Prison Rape Elimination Act Certification – Must obtain within one year of employment.

PHYSICAL DEMANDS: The work requires to stand; walk; use hands and talk or hear. Job may require to reach with hands and arms and may occasionally be required to sit; climb or balance; stoop, kneel, crouch or crawl and taste or smell. Occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception and ability to adjust focus. Must be able to endure long periods of standing. 

SPECIAL WORKING CONDITIONS:  Position is subject to Pre-Employment drug testing.  This position is Safety Sensitive and will be subject to random drug screening for duration of employment. Must undergo and successfully pass a thorough background check including FBI fingerprinting. The position requires a pre-employment physical examination and annual physical examinations for the duration of employment to perform the job duties. In addition, the job requires a participation in the department’s quarterly physical fitness tests.  The position is subject to work 12 hours shifts, overtime, weekends, holidays, and will be required to be on standby.
