JOB PURPOSE:

To assist the Executive Chef in leading and managing the pastry team, ensuring the creation and delivery of high-quality pastry products.


ESSENTIAL FUNCTIONS:

  • Preparation and production of all pastries, and breads for banquets and all outlets.
  • Ensures compliance with all hotel policies and procedures that relate to food and beverage, as well as local, state, and federal laws and regulations.
  • Ensures proper receiving, storage (including temperature settings) and rotation of food products so as to comply with the Department of Health.
  • Maintains a clean and sanitary food production area according to Department of Health standards.
  • Verifies all foods prepared meet quality standards in terms of portion size, flavor, texture, and consistency
  • Orders and requisitions all supplies for the pastry shop. Produces decorative centerpieces and special orders.
  • Collaborate with the Executive Chef to create new dessert items for all menus, considering seasonal ingredients and trends.
  • Train and develop pastry team members on techniques, sanitation practices, and recipe standards.
  • Keeps adequate supply of all prepared products on hand to ensure the proper quantities and rotate products.
  • Demonstrates positive leadership characteristics that inspire team members to meet and exceed standards, and promote team member empowerment.
  • Daily cleaning of walk-in and reach-in boxes to ensure safety.
  • Adhere to control procedures for cost and quality.
  • Other duties as assigned.

EDUCATION:

High school graduate or equivalent required.

Degree from a post-secondary culinary/pastry arts training program preferred
