As part of our commitment to delivering unforgettable experiences, we are searching for a visionary Director of Food & Beverage to oversee the food and beverage programs of The Monarch San Antonio.

 

Position Overview:
We are seeking an accomplished and innovative Director of Food & Beverage to lead and manage all food and beverage operations for The Monarch San Antonio. In this role you will provide strategic vision and direction for all food and beverage outlets, ensuring exceptional guest experiences, operational excellence, and sustained financial performance in alignment with the highest standards.

ESSENTIAL FUNCTIONS:

  • Developing and implementing strategies to drive revenue growth and maximize the financial performance of all F&B outlets. This includes forecasting, budgeting, and actively monitoring key performance indicators (KPIs).
  • Implement and monitor effective controls for food, beverage, and labor costs. This involves analyzing financial reports, managing inventory, and negotiating with suppliers to ensure a healthy profit margin without compromising quality.
  • Identifying and creating new revenue opportunities through menu innovation, special events, promotions, and aligning F&B offerings with the hotel's overall business strategy.
  • Setting and upholding the highest standards of quality, service, and guest satisfaction. This involves supervising day-to-day operations, ensuring compliance with health and safety regulations, and continuously seeking ways to elevate the guest experience.
  • Collaborating with the Executive Chef and other culinary leaders on menu planning and pricing. This involves staying current with market trends, competitor offerings, and customer feedback to create enticing and profitable menus.
  • Overseeing inventory control, purchasing, and managing relationships with vendors and suppliers to ensure the availability of high-quality products at competitive prices.
  • Recruiting, training, and developing a diverse team of F&B professionals, from managers and chefs to servers and bartenders.
  • Fostering a positive, professional, and motivated work environment. This includes providing clear direction, setting goals, and offering coaching and feedback to ensure employee satisfaction and productivity.
  • Conducting performance reviews, providing constructive feedback, and implementing corrective actions when necessary to maintain a skilled and efficient workforce.
  • Implement effective control of food, beverage and labor costs among all sub-departments.
  • Continuously evaluate the performance and encourage improvement of the personnel in the food and beverage department. Plan and administer a training and development program within the department, which will provide well-trained team members at all levels and permit advancement for those persons qualified and interested in career development.
  • Effective verbally communicate with Banquet Manager, Event Manager, and Catering Managers, Property Operations Manager, Restaurant Manager and Director of Outlets and Banquets.

KNOWLEDGE, SKILLS AND ABILITIES:

  • Extensive experience in upscale full-service hotel operations preferred
  • Strong background in restaurant management & banquets preferred
  • Excellent communication skills, both written and verbal, with the ability to present and influence at the executive level
  • Proficiency in leveraging technology, data analytics, and consumer insights to make informed decisions and drive innovation in F&B offerings
  • Maintain a professional, neat and well-groomed appearance
  • Must have flexible work hours that may include evenings, weekends, and holidays

EDUCATION AND EXPERIENCE:

  • Any combination of education and experience equivalent to graduation from college or any other combination of education, training, or experience that provides the required knowledge, skills, and abilities.
  • Five years’ previous experience in a Food and Beverage Management capacity. Restaurant and Banquet background preferred.
  • Proven leadership in developing and launching new food & beverage concepts, resulting in revenue growth and enhanced guest satisfaction

LICENSES OR CERTIFICATES:

Food Handlers Certification required.

TABC required.

CPR certification preferred.
