The Monarch San Antonio - A Legacy of Service and Sophistication
The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Summary
The Executive Pastry Chef leads the hotel’s pastry and dessert operations, overseeing the creation, production, and presentation of all baked goods, confections, and plated desserts for multiple outlets, banquets, and in-room dining. This role ensures each pastry experience reflects the property’s Forbes Five-Star and Hilton Curio Collection standards of excellence, artistry, and consistency.
Essential Functions
Leadership & Operations
• Direct all aspects of pastry production across restaurants, lounges, banquets, and in-room dining. • Develop, test, and implement innovative dessert menus aligned with the hotel’s luxury positioning. • Oversee daily operations of the pastry kitchen, ensuring compliance with recipes, presentation, and quality standards. • Collaborate with the Executive Chef and Food & Beverage Director on seasonal menu planning and special events. • Maintain proper inventory, cost controls, and purchasing for all pastry ingredients and equipment. • Lead daily briefings and ensure smooth coordination between culinary, stewarding, and service teams.
• Perform any other duties as assigned by Management.
Talent Management
• Recruit, train, and mentor pastry chefs, bakers, and support staff, fostering creativity and professional growth. • Conduct performance evaluations and maintain high morale within the pastry brigade. • Promote a culture of teamwork, craftsmanship, and respect consistent with Forbes Five-Star stand-ards.
Quality & Standards
• Ensure all desserts and breads are prepared with precision, elegance, and consistency. • Maintain strict adherence to food safety, sanitation, and hygiene standards. • Participate in menu tastings, quality audits, and Forbes readiness assessments.
Guest Experience & Brand Representation
• Engage with guests and VIPs when appropriate to personalize the culinary experience. • Represent the pastry team at hotel events, photo shoots, and media opportunities. • Uphold the hotel’s brand identity, values, and luxury service ethos in every product and presentation.
Qualifications
• Minimum of 7 years of pastry experience, including 3+ years in a leadership role within a luxury or Five-Star hotel or fine dining establishment. • Degree or certification in Culinary Arts or Patisserie preferred. • Food Manager Certification Required. • Proven expertise in French pastry, chocolate work, artisan breads, and plated dessert presentation. • Strong organizational, leadership, and mentoring skills. • Excellent communication and collaboration abilities. • Creative, detail-oriented, and passionate about innovation and guest satisfaction.
Physical & Working Conditions
• Must be able to stand for extended periods and work in a fast-paced kitchen environment. • Flexible schedule including weekends, holidays, and special events.
