The Monarch San Antonio - A Legacy of Service and Sophistication

The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Summary

The Chef de Cuisine is responsible for leading the day-to-day operations of multiple outlets ensuring an exceptional culinary experience aligned with Forbes 5-Star and brand standards. This role requires a dynamic and creative leader who demonstrates culinary excellence, operational discipline, and the ability to inspire a high-performing kitchen brigade.

Essential Functions

  • Oversee all aspects of kitchen operations, including menu development, food preparation, execution, and presentation.
  • Ensure all dishes meet the highest standards of quality, flavor, and consistency in accordance with Forbes 5-Star expectations.
  • Lead, train, and mentor culinary team members to foster a culture of excellence, collaboration, and continuous improvement.
  • Partner with the Executive Chef on seasonal menu planning, costing, and product sourcing.
  • Monitor and control food cost, labor cost, and inventory levels to achieve departmental financial goals.
  • Maintain strict compliance with health, safety, and sanitation regulations.
  • Collaborate closely with Food & Beverage leadership to ensure seamless service execution and guest satisfaction.
  • Support the development and implementation of pre-opening SOPs, culinary training manuals, and service standards (for pre-opening hotels).
  • Drive innovation by integrating local, sustainable ingredients and modern culinary techniques reflective of the brand’s identity.
  • Participate in special events, menu tastings, media experiences, and culinary promotions as required.
  • Perform any other duties as assigned by Management.

Qualifications

  • Minimum 5 years of progressive culinary leadership experience, including at least 2 years as Chef de Cuisine or equivalent in a luxury or Forbes 5-Star property.
  • Degree or certification in Culinary Arts preferred.
  • Food Manager Certification Required.
  • Proven experience managing multi-outlet or fine dining operations.
  • Strong financial acumen and understanding of kitchen P&L management.
  • Expertise in menu design, recipe costing, and modern plating techniques.
  • Passion for mentorship and team development.
  • Ability to thrive in a fast-paced, pre-opening or evolving luxury environment.

Physical & Working Conditions

  • Must be able to stand for extended periods and work in a fast-paced kitchen environment.
  • Flexible schedule including weekends, holidays, and special events.
