The Monarch San Antonio - A Legacy of Service and Sophistication
The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Summary
The Banquets Sous Chef supports the Executive Chef in overseeing all banquet culinary operations for the hotel, ensuring flawless execution of events that reflect the standards of a Forbes Five-Star luxury property. This role requires exceptional leadership, organization, and attention to detail to deliver world-class cuisine and personalized experiences for every guest.
Essential Functions
Operational Excellence
- Supervise all aspects of banquet food preparation, production, and presentation to ensure consistent quality and adherence to established recipes and standards.
- Coordinate closely with the Events and Banquet Service teams to ensure seamless execution of all functions, including weddings, conferences, and VIP events.
- Oversee daily kitchen operations for banquets, including staffing, scheduling, and quality control.
- Monitor food costs, portion control, and inventory management to align with budgetary goals while maintaining luxury standards.
- Ensure that all culinary areas maintain the highest standards of cleanliness, organization, and safety in compliance with local health and sanitation regulations.
- Perform any other duties as assigned by Management.
Leadership & Team Development
- Lead, mentor, and train the banquet culinary team to deliver excellence in execution, teamwork, and service culture.
- Foster a positive, professional, and collaborative work environment aligned with hotel values and Forbes Five-Star standards.
- Assist with recruiting, onboarding, and performance management of culinary staff within the banquet division.
- Promote cross-training and professional development within the culinary team.
Guest Experience
- Collaborate with Event Managers and clients on menu customization, tastings, and special dietary requests to create memorable experiences.
- Uphold and model exceptional service, presentation, and attention to detail to ensure all events exceed guest expectations.
- Ensure timely and elegant food delivery for all banquet functions.
Innovation & Standards
- Contribute to the development of seasonal and themed banquet menus that highlight local ingredients and contemporary culinary trends.
- Support pre-opening initiatives including recipe standardization, menu costing, and kitchen setup (if applicable).
- Participate in hotel-wide initiatives related to sustainability, food waste reduction, and community engagement.
Qualifications
- Minimum 5 years of progressive culinary experience, with at least 2 years in a leadership role within a luxury hotel or fine-dining environment.
- Proven experience in high-volume banquet or event operations.
- Strong knowledge of international cuisines, modern plating techniques, and luxury service standards.
- Degree or certification from an accredited culinary institution preferred.
- Food Manager Certification Required.
- Excellent leadership, organizational, and communication skills.
- Demonstrated ability to lead large, diverse culinary teams in a fast-paced, high-standard environment.
- Strong knowledge of modern cooking techniques, international cuisines, and plating artistry.
- Solid financial understanding of P&L, cost controls, and kitchen operations management.
- Proven ability to manage multiple priorities and maintain composure under pressure.
Physical & Working Conditions
- Must be able to stand for extended periods and work in a fast-paced kitchen environment.
- Ability to work flexible hours, including nights, weekends, and holidays, based on event schedules.
